The D. leg.vo 157/97, that recepisce the Community Directive 93/43, have gone into effect on June 28 1998. They are kept to observe such law all the public subjects or deprived that practice one of the following activities with or without thin of profit: Preparation, transformation, manufacture, confezionamento, deposit, transport, distribution, manipulation, sale, supply and administration of foods and drinks. Of it that the norm concerns the industrial establishments achieves, the handicraft laboratories (confectioneries, gelaterie, rosticcerie, pasta
